PotW: Whole wheat pancakes with almond fruit and mascarpone cream

I don't know if anyone else gets this, but sometimes, there are just certain foods that you tend to cook with certain people.  And, for my awesome Icelandic roommate, Maria, and I, it's grilled cheese sandwiches and pancakes.  We've gone through several incarnations of pancakes already, and there's nothing more I look forward to on a Saturday morning than to wake up to the newest version of pancakes that we can think and cook up.  So, I'm starting a new weekly feature here on Desserts for Breakfast: the Pancake of the Week  (aka: PotW), since pancakes are, after all, a dessert.  :-).

This week, we had some leftover almond-berry-stone fruit mix from the night before, so we decided to concoct something that would complement this last hurrah of summer fruits:


Whole wheat pancakes
with summer fruit - almond mix
and almond mascarpone whipped cream




The whole wheat pancakes here aren't very sweet, so they were the perfect accompaniment to the summer fruits and mascarpone whipped cream.  And, the slight almond flavoring in the whipped cream went well with the slivered almonds in the fruit.  All in all, definitely a good send-off of summer fruits... looking forward to fall!

Whole wheat pancakes
adapted from The More with Less Cookbook by Doris Janzen Longacre
Makes ~12-15 sand dollar pancakes


1 cup milk (preferably buttermilk, but this is what we used for lack of buttermilk)
2 Tbspn vegetable oil
1 egg
1/2 cup white flour
1/2 cup whole wheat flour
1 tspn baking powder
1/2 tspn baking soda
1/2 tspn salt

1. Combine milk, oil, and egg in a bowl.
2. Add remaining ingredients and mix until moistened.
3. Fry on a skillet at medium heat in butter.

Almond and summer fruit mix

Blackberries
Blueberries
Kiwi, chopped
Strawberries, chopped
Yellow nectarine, chopped
Apricots, chopped
Slivered almonds
juice of 1 lime

1. Combine fruit and almonds.
2. Add lime juice and stir.

Almond mascarpone whipped cream

1 cup heavy whipping cream (I like to use manufacturing cream, if you can find it.)
1/3 cup mascarpone cheese
Powdered sugar to taste (~1-2 Tbspn)
1 tspn almond extract

1. By hand, or with a mixer, whip the cream and mascarpone cheese until soft peaks.  Do not overmix.
2. Stir in powdered sugar and almond extract to taste.

Pile on fruit over the pancakes and  top with a heavy dollop (or two, or three) of mascarpone cream.
